Truffles are one of the most sought-after delicacies in the culinary world and it takes a keen nose to find them. They are highly prized for their exquisite flavor and aroma, which has been described as a combination of garlic, earthy, and musky notes. The unique flavor of truffles has made them a favorite among gourmet enthusiasts and chefs alike. Truffles are also an incredibly versatile ingredient. They can be used to enhance a variety of dishes, from pasta and risotto to scrambled eggs and omelets. Their earthy flavor pairs well with a wide range of flavors, including cheese, other mushrooms, and even chocolate. They can also be shaved over salads and other dishes as a finishing touch. Perhaps one of the most decadent dishes would be Truffle Topped Lobster Mac and Cheese! Whatever the dish may be, the gourmets appetite for truffles has fueled a highly specialized industry for centuries, an industry championed by K9’s!


The age-old practice of truffle hunting has been around since Roman times, with people searching for the fragrant and flavorful fungi in many parts of the world. Traditionally, truffles were foraged for by hand, often times with the help of pigs or other animals that were trained to sniff out the subterranean delicacies. However, in the last century, truffle-hunting dogs have become increasingly popular and have become the preferred method of truffle hunting.


Dogs specifically trained to sniff out these hidden delicacies are employed by hunters who take to the woods looking for their reward. The selection and training process is a long one. Truffle hunting dogs must be taught how to recognize what it is they should find underground and to stay focused while hunting. with small breeds such as Spaniels being favored due to their keen sense of smell. Their smaller stature allows them to navigate the dense woods with ease as they sniff through the undergrowth of vast tracks of land.


During peak season (generally late October through mid March), when different types ripen depending upon soil conditions, a team may spend an entire day scouring an area in search of that special something. Once an area is identified as containing truffles, a hunt will begin. The handler will allow the dog to roam freely, sniffing and digging as it goes. The dog’s handler will then follow the dog as it sniffs about the hunting grounds. When the dog finds a truffle, it will indicate this by barking, pawing, or digging. The handler will then gently dig up the truffle and reward the dog with a treat or a pat on the head. The payoff – a single lone truffle, or if they are lucky a grouped together cluster forming larger clumps known as ceps! For both the hunters and the connoisseurs alike, the pursuit of the exotic has been and still is well worth the price with truffles being one of the most expensive foods on Earth! #truffles
